I love that you made a whole post on this! I often push for people to AT LEAST go vegan in their baking if for nothing else, they can eat anything that they desire raw. Plus before I was a vegan, it was such a PAIN to work with eggs - ick! All that messiness and hand washing and worrying about little bits of shells getting in the food. No thanks!
